- 2 lb. 402D Leg (Outside Muscle cut into 1-inch cubes)
- 2 Tbsp. worcestershire sauce
- 1 Tbsp. kosher salt
- 1/2 Tbsp. black pepper (fresh ground)
- 1/2 Tbsp. dark brown sugar
- 1 1/2 cups Duke's Mayonnaise
- 1 cup cider vinegar
- 3/4 cup granulated sugar
- 1 clove garlic (peeled)
- 2 shallot (large, peeled, rough chop)
- 1 Tbsp. kosher salt
- 1/2 Tbsp. black pepper
- 1 tsp. cayenne pepper

Directions
- In Vitamix add all ingredients and puree well to combine and set aside.
- In mixing bowl combine Worcestershire, salt, pepper and sugar and mix well to combine.
- Completely coat the pork in the marinade and allow to marinate for 1 hour.
