  • 3/4 cup penne pasta
  • 1/3 cup vegetable stock (cold)
  • 2 teaspoons olive oil
  • 1 clove garlic (peeled and roughly chopped)
  • 3 tablespoons fresh basil leaves (stripped from stems)
  • 1/4 cup pitted black olives (sliced)
  • 2 tablespoons Parmesan (grated)

    Directions

    1. Cook the pasta in boiling salted water according to the package instructions. Purée the stock, oil, garlic and basil in a blender. Season with salt and black pepper. Drain the pasta and toss with the pesto and olives. Sprinkle with Parmesan.
