I really, really loved this. I added a bit of pesto paste to it as well...for extra taste.

Good and quick recipe! Tastes healthy and savory! Here are the changes that I've made.
While the quinoa is cooking, add 2 vegetable bullion cubes to the water.
Follow the recipe and once the onion, garlic, spinach, basil has finished cooking, add Parmesan. Stir until well mixed and melted. Add quinoa to vegetable mix. Stir well.. Serve with sprinkled parmesan.
