Super easy, quick and yummy. I used store bought pesto that I already had on hand and the whole family loved it.

I made this last night with Garlic Scape Pesto and homemade vegan parm (so easy- recipe on Yummly). Used a sweet pepper from our CSA instead of the mini peppers and also roasted cherry tomatoes. This was my favorite dish of the week (and I cook constantly). Thanks!
