  • 2 cups rice (cooked, cold, leftover, from day before)
  • 2 eggs (beaten)
  • 1/2 cup basil leaves (chopped right before adding to prevent blackening)
  • 1/2 teaspoon kosher salt
  • freshly ground black pepper
  • 2 tablespoons soy sauce (as desired, more soy sauce = browner rice)
  • 1 tablespoon vegetable oil (sometimes I use bacon fat, mmm!)
  • 2 green onions (depending on the size and your preferences, thinly sliced)

    This was simple and full of flavor. We changed the soy sauce to liquid aminos (soy sauce alternative) and it was wonderful. Adding a protein could be easy, although we elected not to for the first time. Will be making again. Thanks!
