- 4 oil cured black olives (pitted)
- 3 anchovy filets
- 1 Tbsp. capers
- 2 Tbsp. mayonnaise
- 2 cups rice (warm, here I’ve used zakkokumai for added fiber and texture; you could use brown or white rice here just as successfully)
- 2 Tbsp. sushi vinegar
- 1/2 cup salad (tuna, your choice, I used the miso variation, freshly made or frozen)
- 1 Tbsp. capers (optional)
- 1 Tbsp. chopped celery (finely, optional)
