- 4 large eggs (7⁄8 cup eggs)
- 1 Tbsp. water
- 3 1/2 cups all purpose flour (sifted)

Directions
- Place eggs, water, and flour in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed 2 and mix for 30 seconds.
- Remove flat beater and attach dough hook. Turn to Speed 2 and knead 2 minutes.
- Hand knead dough for 30 seconds to 1 minute. Cover with dry towel and let rest 15 minutes before extruding through Pasta Roller & Cutter

As the others said this recipe definitely needs more, but as some suggest I have never used olive oil in my noodles. That being said this is not the original recipe by Kitchenaid as they have different amounts. 2 3/4 c. sifted flour(650 ml), 3 eggs and 2 TBSP water but it also states to have 3/4 c. of liquid( eggs and water combined).

This recipe makes for a nice base, - I added 1Tbsp olive oil to this recipe and increased the water just a smidge. I also used 2 parts unbleached white flour to 1 part white whole wheat flour. Dough handles better and the noodles cook up real nice.

This recipe needs more water and some olive oil. Weigh your flour. A cup of all-purpose flour weighs 4 1/4 ounces or 120 grams.
