- 1 cup barbecue sauce (your favorite)
- 1 cup cooked chicken
- 1 cup salt
- 1/2 red onion (small, thinly sliced)
- 8 oz. mozzarella cheese (shredded, about 3 cups, we use low-moisture whole-milk, but use what you like, even fresh - this recipe is very forgiving)
- kosher salt
- 1 handful fresh cilantro (coarsely chopped)
