- 1 black peppercorns (o’clock clockwise, and ending with the center of the clock:, garlic powder, ground chile of your choice, kosher salt, allspice, annatto seed, cumin, cloves.)
- 2 1/2 lb. pork butt
- 2 Tbsp. annatto seed
- 1 1/2 tsp. black pepper corns
- 1 tsp. cumin seed (or powder)
- 3 tsp. chiles (your favorite ground up, can be varying degrees of heat but no salt)
- 4 allspice
- 1/4 tsp. cloves
- 2 tsp. salt
- 1 1/2 tsp. garlic powder (or granulated garlic)
- liquid
- 2 1/2 lb. pork butt (the liquids are:)
- 1/4 cup white vinegar
- 1/4 cup orange juice
- 5 Tbsp. lemon juice
- tequila (splash of, optional)
