The Barbacoa turned out very tender and spicy. We used it to make burrito bowls with rice, cilantro, lime, black beans, corn, salsa, cheese, and sour cream. Side of chips. There’s enough to make six servings.

This was delicious Instead of using forks to shred the meat, I used my star shaped meat masher and it was great I put it on a bed of cilantro lime rice, shredded cheese, added cowboy caviar and a dollop of sour cream and it was awesome

Excellent!! Spicy and delicious. We made several meals with this. Empanadas and omelettes being our favorite. Will make again!!

SO good!! Made it with plain adobo and not chilies so it was kid friendly!!

Used my Instant Pot and was easy to make and fast. Very tasty! I served this with rice and toppings like the photo. Avocado would be great with this.
