- 2 stalks lemongrass (prepped by chopping off the ends, peeling off the dry layers, and finely chopping)
- 8 oz. super firm tofu (cubed)
- 3 Tbsp. soy sauce
- 8 oz. shiitake mushrooms (2 containers, stemmed and chopped)
- 2 Tbsp. soy sauce
- rice (greens, etc. - base of choice)
- cilantro
- jalapeños
- sriracha mayo
- lime juice
