Lovely. I only had provinciale herbs but that worked fantastically. The batter was difficult to get to stick, as it dripped on the panko and created clumps, but I kept making extra panko and it worked in the end. Didn't need half of the batter. Made the sauce ahead of time and put it in the fridge which made the flavour better.
