Turned out perfectly. Made with 120g sugar and 6 tbsp maple syrup as suggested in the comments and it was sweet enough

I've made this a couple of times now and it's proved to be very popular. I add and extra banana and walnuts but only add 110g of sugar and 6 tbsp of maple syrup as the loaf is already quite sweet.
