- 1 cup white rice flour (sweet)
- 1/2 cup sorghum flour
- 1/2 cup flaxseed meal (golden)
- 1 tsp. baking powder (aluminum free)
- 1/2 tsp. baking soda (aluminum free)
- 2 cups coconut milk (not canned)
- 1 1/2 tsp. apple cider vinegar
- 4 Tbsp. coconut sugar (or unbleached cane sugar)
- 4 Tbsp. coconut oil
- 1 tsp. gluten-free vanilla extract (pure, I use Nielsen Massey or Frontier, optional)
- 1/4 cup walnut (small pieces)
- 3 bananas (large ripe, diced, I use brown spotted bananas)
- coconut oil (Extra, for greasing pan)

- 4 Tbsp. coconut oil
- 3 Tbsp. coconut sugar (or light brown sugar)
- 3 bananas (large, sliced about ½ inch thick)
