  • 1/4 cup butter (softened)
  • 2/3 cup light brown sugar (you can also use honey or maple syrup)
  • 2 cups mashed banana (about 4 medium bananas, mash 3 1/2 bananas and save half a banana for the top)
  • 2 eggs
  • 1 1/2 cups spelt flour (you can also substitute with all purpose flour)
  • 2 teaspoons Calumet Baking Powder
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1/2 cup pecans (crushed, you can use any nuts you like)
