    I followed the recipe, but not happy with the consistency of the muffin. Will try and make them again with canola oil instead of the coconut and see if that helps.

    I found this recipe when I had two overripe bananas, but no milk or baking powder at home. I divided the recipe by three, and it still made nine muffins. It tasted great and was so easy and fast to make!
