- 1 cup cashew meal (I bought mine at Trader Joe’s, but you can easily grind raw cashews in your food processor to make your own)
- 7 medjool dates (soft, pits removed)
- 2 Tbsp. virgin coconut oil (melted and cooled, plus more to grease the pan)
- 1 tsp. pure vanilla extract
- 1/4 tsp. fine sea salt
- 3/4 cup banana (mashed ripe)
- 3 Tbsp. fresh lime juice (to taste)
- 1 tsp. lime zest (packed)
- 1/2 cup coconut butter (not to be confused with coconut oil)
- 1 Tbsp. virgin coconut oil (melted and cooled)
- 1 pinch fine sea salt
