Love these muffins! I usually eat them for breakfast, mid-morning snack or afternoon pick-me-up. They are a great pre-workout boost! My husband even gave them the green light, which is rare for any of the healthy recipes I try. The only mods I made were not using any xantham gum and instead of 1/4 cup suger + 1/4 cup stevia, I just used 1/4 cup splenda. I have made these muffins at least 10 times now, definitely a staple in my house.
