  • 30 squares graham crackers (coarsely crushed)
  • 6 tablespoons butter (melted)
  • 1 1/4 cups heavy cream (chilled)
  • 1 tablespoon powdered sugar
  • 1 tablespoon vanilla extract
  • 2 bananas (ripe)
  • 1/4 cup flaked coconut (toasted)
  • 1 tablespoon honey

    Directions

    1. Process graham crackers in a food processor until fine crumbs form. Add butter; process to combine. Press firmly into bottom and sides of a 9-inch tart pan with removable bottom. Refrigerate for at least 30 mins, until firm.
    2. Beat cream, powdered sugar and vanilla in a large bowl with an electric mixer until soft peaks form. Chill.
    3. Just before serving, gently remove crust from tart pan and place on a serving plate. Spoon whipped cream into crust, spreading to cover evenly. Peel and slice bananas; arrange over top. Sprinkle with coconut and drizzle with honey.
