    Came across this recipe today and decided to try them. And the verdict: Delicious!! I followed the recipe as directed and made no additions so that I could try the recipe as is. I didn't have a loaf pan so I used a muffin pan instead (made exactly a dozen). The muffins baked nicely and came out with a delicate carmelized top. They were very moist and the sweetness from the sugar and coconut was just perfect (and not too sweet). I would bake these again and perhaps the next time add walnuts, but they are good on their own. Thanks for sharing!!
