Definitely a fresh take on your classic banana cake. Make sure you are timing how long you are mixing your eggs. I don’t think I mixed mine long enough so the cake came out on the denser side but still very most. The lemon zest aids a fresh kick but I feel it over powers the banana flavor. I’m gonna maybe try adding a little vanilla and seeing if that balances out the flavors.I’m going to play around with the recipe a bit and try different yummy variations
