  • 1 pound mushrooms (baby portebella, washed and stems removed)
  • 2 cups boneless ham (Frick's Applewood Smoked, I put this through my grinder, but you can chop it fine and get the same results)
  • 1 pound beef (sirloin, steak if using your own grinder, or preground)
  • 1/4 cup pepperoni (chopped)
  • 2 tablespoons capers
  • 4 tablespoons mayo (divided)
  • 1 cup AP flour
  • 2 tablespoons sea salt (divided in half)
  • 2 tablespoons pepper (coarse, divided in half)
  • 1 egg (whisked)
  • 1 tomatillo (large, washed and sliced)
  • 2 cups canola oil (for frying)
  • fresh cilantro (chopped)
  • 1/2 pound bacon (cooked)
  • 1/2 stick salted butter
  • 1/2 yellow onion (sliced)
  • 2 tablespoons wing sauce (or hot)
