- 2 cups yellow onions (coarsely chopped)
- 2 Tbsp. olive oil
- 2 cups rhubarb (cut into ½” pieces, 5 or 6 slender stalks)
- 1/2 cup red wine (I use a Côtes du Ventoux)
- 3/4 cup brown sugar
- 1 tsp. kosher salt
- 1 Tbsp. worcestershire sauce
- 1/2 cup red wine vinegar
- 1/4 tsp. mace
- 1/4 tsp. allspice
- 1 Tbsp. brown mustard (I use one with horseradish in it.)
- 1 Tbsp. fresh thyme leaves (lightly chopped, or bruised)
- 3 Tbsp. balsamic vinegar (strawberry, See note, below.)
- honey (to taste, if necessary)
- 1 pinch kosher salt
- ground black pepper (Freshly)
