- cracked black pepper
- sea salt
- 1 kg baby beets (trimmed and scrubbed, I peeled mine)
- 1 Tbsp. tarragon leaves (chopped)
- 1/2 cup red quinoa (rinsed)
- 350 grams speck (or bacon thickly cut)
- 400 grams kale (purple, stems removed and leaves roughly torn)
- 3 cloves garlic (sliced)
- pecorino (shaved, to serve, I omitted)
