- 1 Tbsp. Dijon mustard (mine is really seedy mustard but you can go smooth)
- 1 tsp. honey
- salt
- pepper
- 1 Tbsp. olive oil
- 4 chicken cutlets (boneless skinless, very thin)

- 2 Tbsp. balsamic vinegar
- 8 oz. kale (ribbed and chopped, I opted for baby kale, torn)
- 1 cup radishes (thinly sliced)
- 1 cup kale (cooked, I used red kale)
- 1 apple (large, very thinly sliced, use a tart apple such as a Granny Smith or a Pink Lady)
