This is really delicious! I eliminated the peppers due to preference. I may add some fresh mushrooms next time. I prepped it the night before so I could just put it in the crockpot before work. I cooked it for 8 hrs. on low. The veggies turn out tender and tangy, and the chicken is perfectly juicy. I am trying to cut carbs so I ate it as is, but I’m sure it would be good with rice or quinoa. Will definitely make it again.
