- 2 cups all-purpose flour (unbleached white, you’ll get better results if you chill your flour in the refrigerator for half an hour or so; see Notes)
- 2 1/2 tsp. baking powder (make sure it hasn’t expired; see Notes)
- 1/2 tsp. salt
- 1/3 cup butter (chilled or frozen, or shortening or a combination of the two, 1/3 cup is 5 tablespoons plus about 1 teaspoon – you can use 5 or 6 tablespoons if you prefer; see Notes for more information on combining butter and shortening)
- 3/4 cup milk (whole is great but skim works; may need a bit more or less; see step 5 in Procedure)
