- 196 grams lard
- 140 grams butter
- 224 grams all-purpose flour
- 1 large egg
- 80 mL ice water (or approx. 2.7 ounces or a little more than 1/3 cup)
- 140 grams granulated sugar
- 360 grams water
- 240 mL eggs (about 4 whole, I added an extra 2 egg yolks to enrich the custard)
- 60 mL evaporated milk
- 1 Tbsp. custard powder (my amendment to enrich the custard and provide some stability)
- 1 tsp. vanilla extract
- 1 1/2 tsp. tea powder (matcha, unsweetened variety; optional)
