- 8 oz. whole wheat spaghetti (broken into thirds, I love Garofalo Organic Whole Wheat Italian Spaghetti)
- 1 tsp. salt (for pasta cooking water)
- 3 tsp. olive oil (depending on your pan)
- 1/2 cup finely chopped onion
- 2 Tbsp. minced garlic (or less)
- 1 pkg. Italian turkey sausage (5 links - 1 1/2 lb. Sweet)
- 3 cups pasta sauce (homemade or jarred, use the lowest sugar pasta sauce you can find if you're using sauce from a jar)
- 2 cups low-fat cottage cheese
- 2 eggs (beaten)
- 1 tsp. italian seasoning (a blend of dried basil, oregano, thyme, marjoram, and rosemary)
- 1 1/2 cups low fat mozzarella (grated, or more, depending on how much comfort you need!)

My husband doesn't like turkey sausage so, naturally, I substitute sausage he does enjoy. This is quick and easy and can be made ahead.
