    A little extra prep time required but I loved it - very tasty. Even my veg-hating honey gave it the thumbs up.
    I used this recipe as a base, but amped it up. I layered zucchini slices, tomato slices, a layer of pureed white onion, one more layer of zucchini. Baked. Then added a layer of minced garlic, mozzarella, and sliced jalapenos and baked until the cheese was melted. I think you could do a few more layers even. Great recipe though!
