- 3 cloves garlic (minced)
- 10 oz. frozen spinach (package, thawed)
- 1 tsp. oregano
- 2 Tbsp. fresh basil (chopped)
- kosher salt
- pepper
- 8 oz. fat free ricotta
- 1/4 cup grated Parmesan cheese
- 2 cups shredded part skim mozzarella (I recommend: Polly-O)
- olive oil cooking spray (I used my Misto)

It’s a keeper. I need to adjust the spices as my wife who cannot get enough seasoning informed me that the spinach absorbs heaps of the salt and pepper so you need to add bunches more. Eh! Oh well! Still a keeper as comfort food is always welcome!

soo yummy and a big amount. I used fresh spinach and used 2x the amount of ricotta. (the whole container)

Followed instructions and cooked the noodles only 3 minutes.
Added chicken, used fresh spinach— might chop smaller.
Out of a full box of noodles, we have leftovers in the freezer and for lunch!
Really simple and quick on the prep. Make even more next time to freeze a full meal because there are a lot of dishes after this one.
Fresh basil is a must!

I liked it a lot although I added more spinach and tomatoes to increase veggie intake. I also upped on the seasoning, because I thought the original was a bit bland for my taste. And I added some chili flakes. As basil a soft leaf herb, I added it on the plate instead of in the sauce while cooking.All in all a very nice dish.

I made it mostly as written, with the addition of half a pound of spicy Italian sausage and half on onion. Really helped the flavor pop a bit more. I would add about a teaspoon of salt and half a teaspoon pepper to this where it says to taste. I only did half a t of salt and it was okay, but I felt a bit more would have upped the flavor profile.

Really easy to make! And the flavor was really nice, but nothing special. However the fresh basil really made the flavor pop. Maybe a few more spices would make the flavor stand out a little more.
