- 16 oz. gnocchi (see NOTES)
- 3 Tbsp. olive oil
- 6 cloves garlic (sliced thin)
- 1 tsp. crushed red pepper flakes
- 24 oz. passata (crushed tomatoes)
- 1/4 cup cream
- 2 cups baby spinach leaves (packed, large stems removed)
- 1 tsp. fresh basil leaves (chopped)
- fresh ground black pepper
- 1/4 tsp. salt
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese (fresh)
- 1/2 cup low moisture mozzarella cheese (shredded)
- fresh parsley leaves (chopped for garnish, optional)

Base idea is nice, however this is not a balanced healthy meal. I added 2 paprika and shredded carrot to have enough veggies. Also used cottage cheese in stead of ricotta to cut back on unhealthy fats and used mozzarella light, no cream and no parmesan. Served on raw spinach instead of putting it in. Didn't do it in a skillet, but just fried the onion and garlic, then added that to cold sauce, cooked fresh gnocchi and other ingredients, and put it in the oven. To add protein you could add some beans or egg, but didn't do that this time.
