- 1 Tbsp. olive oil
- sea salt (large grain)
- 1/2 cup pine nuts (soaked in hot water for at least 2 hours)
- 1 1/2 tsp. Dijon mustard (good, i use Maille)
- 3 Tbsp. water
- 1 Tbsp. apple cider vinegar
- 1 Tbsp. lemon juice (fresh squeezed)
- 1 clove garlic (roughly chopped)
- 2 Tbsp. fresh basil
- 1 Tbsp. fresh parsley
- 1 sprig fresh thyme leaves (removed)
- 1 pinch fine grain sea salt (to taste)
- ground pepper (couple turns fresh)
