  • 100 grams Parmigiano Reggiano (freshly grated)
  • 350 grams gorgonzola (broken into chunk. I used dolce/sweet)
  • 150 grams pancetta (cubed)
  • 250 grams criminis (or button mushrooms cleaned and cut into thick slices)
  • 250 grams mushrooms (Pioppini, cleaned)
  • 1/2 glass dry white wine
  • 1 onion (medium, peeled and finely chopped.)
  • salt (for pasta and to taste)
  • black pepper (to taste)
  • 3 tablespoons olive oil
  • 1/2 glass milk (or 1 cup of pasta cooking water)
