The rice cooked perfectly! I added in some lemon zest before I stuck it in the oven, then I topped the finished product with some toasted walnuts, shredded chicken, cooked spinach, and asiago cheese. A simple dish that's easy to make. I'd probably add more herbs or spices for flavour next time, though.
