What a lovely quick weekday dish! I used corn (off the cob, as it was in season) instead of shrooms and it was delish! College daughter said it was one of the best dishes she’s had in a while 🙂

Turned out great, although I altered the recipe quite a bit. Next time I make it I’ll add some egg, as I think it will go nicely

Tried doing baked rice for the first time and this recipe is really easy to follow. My son is not into mushrooms so I substitute it with broccoli and it tasted great! Totally recommend for first-timers looking for a baked rice recipe.
