Whole family liked it. They suggested to cube the veggies,as the narrow skins of the vegetables got stuck in their teeth. But Ibwill be making this again!

What a way to get veggies in your family! No one had a clue there was zucchini in it (no yellow was used). I am titleing this "deconstructed eggplant parmesan"...cus I added a layer of cheese, then Italian breadcrumbs on top after foil was removed. No need to stick to herb measurements (just sprinkle on the amountyou want). Super easy and quicker than frying each eggplant slice. Also, sautéed onions and some mushrooms to add to the sauce. Needed extra 10 min cooking time. Serve with noodles or artesian bread.

It was really good!!!! I sort of didn’t follow the recipe and had to improvise, but it turned out pretty well

It was perfect! I don't review recipes, but this one has me searching it out to do just that. It's a lot of work but worth it. I cooked mine in a well seasoned cast iron skillet (similar as pictured above) and feel as though that's a flavor bonus.

It turned out great, however, i wasn't blown away. I recently turned to a plant based diet, so I think it's just because I've never been a fan of tomato sauce.. and this dish required a lot of tomatoes lol. I've always been a fan of Alfredo dishes 😅
It did make a lot, and i took it to work for leftovers and meal preps.

I made this tonight. I’m trying to increase fiber in my diet. I cut the olive oil in half and used water for the other half to create the herb drizzle. This is delicious! I have a large amount and will have healthy leftovers for the rest of the week. Thank you for this fiber filled, delicious, and visually stunning recipe!

It was pretty good, but didn't blow my mind like I was hoping. Maybe the movie gave me too high of expectations, haha! I ended up with a lot of extra veggie slices that I couldn't fit in the pan. It was pretty and I felt fancy making it, but I don't think it was really worth all the effort in the end.

Amazing, as soon as i saw this i thought of the Disney movie ratatouille! It looks exactly the same. It tasted amazing! And I’m not a fan of veggies.

it was delicious! i think next time i would use more garlic. Also, i cooked it for 10 extra minutes while covered, and 20 mins uncovered.

Turned out so much tastier than expected! I’m terrible for not eating enough vegetables so this looked like the perfect gateway meal and I was right, loved it with some pasta on the side. I altered the recipes slightly by adding oregano and parmesan cheese which I would recommend for a sort of veggie lasagna feel. Only note i would make on this recipe is it needed to stay in my oven for about 30 minutes longer than suggested to make sure all the veg was soft in the middle. Overall, really nice humble dish and great for picky eaters

It turned out much better than I was expecting! Next time I would serve it over pasta with a ground sausage meat. And also it looks amazing when it first comes out of the oven.

Love this ratatouille! This was easy to make and turned out beautiful. I topped this with some grated parmesan cheese.

To start I do not like zucchini, squash, or eggplant hardly at all. I am all about trying foods in a recioe though just to see how it turns out. This recipe is awesome! This meal turned out 100x better than I thought and will be just another one added to the repertoire. If you wanted to trick your kids into liking vegetables this is the meal for it LOL.

Lovely! The veg stayed soft but lightly firm to the tooth, and the sauce was lovely!! Love the spiral pattern too though there were a few mixups in my spiral.
