  • 6 portobello mushrooms (large, or 8 large ones)
  • 1/2 cup olive oil
  • 3 tablespoons balsamic vinegar (plus 1)
  • 3 cloves garlic (minced)
  • 1 cup manchego cheese (shredded, may substitute other soft cheese such as a mild cheddar or colby)
  • 1/2 cup Parmesan cheese (grated)
  • 3/4 cup breadcrumbs
  • 1 tablespoon oregano
  • 1/2 cup scallions (minced)
  • 1/2 teaspoon salt
  • 1 teaspoon beef bouillon (optional)
  • 1/2 stick butter

    Directions

    1. Mix the olive oil, 3 tbsps. of balsamic vinegar and 1 clove minced garlic in a bowl.
    2. Rinse the mushrooms and pour the olive oil mixture over them. Set aside for 15 minutes in the bowl.
    3. Meanwhile, preheat the oven to 200 C and mix the rest of the ingredients together in a separate bowl to make the filling.
    4. Spoon the filling into the mushrooms.
    5. Place the mushrooms into a baking dish (with the filling facing up) and bake for 5-7 minutes, until the cheese melts and the edges brown.
