- 2 Tbsp. olive oil
- 1/2 red bell pepper (medium, sliced)
- 1 poblano pepper (small, sliced)
- 1 jalapeno pepper (seeded and sliced)
- 1/2 medium onion (sliced)
- 3 garlic cloves (minced)
- 1 tsp. dried oregano
- 1 tsp. ground cumin
- 3 cups tomato sauce
- 2 cups smoked mozzarella cheese (shredded)
