- 4 mini bella mushrooms (1 cup sliced)
- 3 carrots (sliced into rounds)
- 1 broccoli (crown, cut into bite sized pieces)
- 1 lb. penne pasta
- 1/4 cup olive oil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 16 oz. chunky tomato sauce
- 1 onion (1 cup, chopped)
- 2 Tbsp. olive oil
- 2 Tbsp. unsalted butter
- 2 Tbsp. half-and-half
- 1/2 tsp. salt
- 1/4 tsp. cayenne pepper
- 2 cups shredded cheese (~ a mix of cheddar and mozzarella works great!)
- chopped parsley (top with fresh)
