- 1 lb. lean ground beef
- 1 Tbsp. olive oil
- 2 cloves garlic (minced)
- 1 bell pepper (large, chopped, I used a cubanelle because it’s what I had in the fridge)
- 1 onion (large, chopped)
- 1 tsp. cumin
- 1 tsp. chili powder
- 2 jars salsa
- 1 can black beans (drained and rinsed)
- salt
- pepper
- 2 cups shredded cheddar cheese (or Mexican blend, use 2% if you are trying to keep it lighter)
- 1 zucchini (large, chopped)
- 1 squash (large, chopped)
- 1/2 red onion (large, chopped)
- 2 jalapenos (1-, seeded and chopped)
- 2 cloves garlic (minced)
- 1/2 tsp. cumin
- 1/2 tsp. chili powder
- salt

- 2 Tbsp. chopped cilantro
