- 55 jumbo pasta shells
- 2 cups part skim ricotta cheese
- 1 1/2 cups cottage cheese (large curd)
- 1 1/2 cups fresh mozzarella cheese (shredded, divided [1 cup is for the topping.])
- 1/4 cup grated Parmesan cheese (freshly)
- 1/4 cup fresh cilantro (chopped)
- 1/4 cup fresh basil (chopped & packed into the measuring cup)
- 3/4 lb. ground beef (I used 96% lean)
- 2 Tbsp. olive oil
- 1/2 cup yellow onions (chopped [More if you wish. I used almost a full cup])
- 3 cloves garlic (minced)
- 28 oz. San Marzano tomatoes (crushed, or whole and you can crush them in the pan)
- 1/4 cup fresh basil (chopped, not packed)
- 1 tsp. fresh thyme (chopped)
- salt
- pepper
