- 1 steelhead trout fillet (scaled, skin on or off, about 2 lbs)
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. lemon juice (or lime juice)
- 3 Tbsp. low sodium soy sauce
- 2 Tbsp. Dijon mustard
- 2 Tbsp. honey
- 1 inch ginger root (peeled and grated or thinly sliced)
- 2 cloves garlic (pressed, minced or thinly sliced)
- 1 tsp. kosher salt (or sea salt)
- 1 tsp. ground pepper
- 1/4 tsp. cayenne pepper
- 1 Tbsp. chopped parsley (fresh finely)
- 1 Tbsp. chopped cilantro (fresh finely, or use another tablespoon of parsley)
- 2 Tbsp. white wine (you can skip it if you don't any on hand, but I highly recommend adding it)

This was great. I also added capers. Marinated overnight in the fridge. I did delete the soy sauce and cayenne, because someone that would be eating it is allergic. We all loved it.

This came out so good. The fish was nice and tender and the flavor was perfect. Kept recipe just as it was.

Fantastic!! I didn’t marinate it or add the white wine and it was still delicious! Very flavourful!

It was excellent. I marinated it for 3 hours, and served with oven roasted brussel sprouts and carrots.
