Baked Fish with Crunchy Nut Crust

  • 2 pounds white fish fillets
  • 3/4 cup fresh breadcrumbs
  • 1/2 cup fresh parsley (chopped)
  • 1/4 cup macadamia nuts (chopped)
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 avocados (sliced)
  • 3 1/2 ounces bean sprouts (trimmed)

    Directions

    1. Preheat oven to 400°F. Line a baking tray with parchment paper.
    2. Place fish on prepared tray. Combine breadcrumbs, parsley, macadamia nuts and lemon zest. Season. Sprinkle over each piece of fish then drizzle with a little oil. Bake for 15 mins, or until fish flakes easily with a fork and is no longer transparent.
    3. Meanwhile, toss together avocados and bean sprouts. Drizzle with remaining oil and lemon juice. Season. Serve with fish.
