The photos look great but you hardly taste the eggplant, instead you mainly taste bread because of the bread or panko mixture. It tasted okay the first day but this recipe does not make for great leftovers. It is even more bread-tasting the next day. I threw away the whole second batch the next day. I would highly recommend a flour mixture instead of bread crumbs.
