    Very flavorful and would definitely make again. I made a few alterations. I sprinkled Italian Seasoning on the eggplant along with the pepper, and substituted garlic salt for plain salt. On the final layer I generously sprinkled finely grated Parmesan cheese (2-3 tablespoons).
