This crunchy crusted baked cod tastes like a lighter take on fish and chips.
Ingredients

3 SERVINGS
- 1 lb. fresh cod fillets (3-4 fillets per pound)
- 3/4 tsp. salt (for cod)
- 1/4 tsp. black pepper
- 1/2 cup panko breadcrumbs
- 2 Tbsp. grated Parmesan cheese
- 1/4 tsp. salt (for crust)
- 1/4 tsp. garlic powder
- 2 Tbsp. butter (melted)

Directions
- Preheat the oven to 375°F.
- Line a baking sheet with parchment paper.
- Season the cod fillets on both sides with the salt and pepper and arrange on the prepared baking sheet.

This turned out way too salty. I could not even finish my portion of fish. I would recommend not seasoning the fish prior to putting the Pankow mixture on. I didn’t use a lot of salt when seasoning so I am not sure where all the extra salt came in but it was terrible. My butter I used was unsalted as well. Only thing I have in the house. I won’t try again.

I would cut back on the salt. When I prepared it, it was way too salty for my liking. Either add half the instructed amount of salt in the breading or do not salt the fish. Other than that, it turned out pretty well.

Great, baked the fish for closer to 25 minutes so it wasn't watery in the middle.

So yummy and so easy to make! The seasoning was perfect. I cooked my fillets for about 15 minutes. My almost 2 year old loves it, too! Made it with rice and veggies - perfect easy light weeknight meal.

This came out so good. My family loved it. I did add some Italian seasoning to the panko mix though.

it was good but i made significant changes. this comment is really for my own reminder because my 2 year old actually liked it. i didn't have any parmesan so i just mixed the breadcrumbs, butter, and seasonings. i also air-fried at 370 for 12 minutes because my oven was in use at a different temperature 😆

It was absolutely delicious and so easy to make. Will try it again and add some spice to it
