- 2 yellow bell peppers (or large red, or one of each, cored and thinly sliced)
- 1 lb. baby potatoes (cut into ¼ to ⅓-inch thick slices)
- 4 large garlic cloves (roughly chopped)
- 1 cup pitted green olives
- 1 dry pint cherry tomatoes (on or off the vine, 15–20 cherry tomatoes)
- 1 zucchini (large, halved lengthwise and cut crosswise into ½-inch chunks)
- 3 Tbsp. olive oil
- 3 Tbsp. chopped cilantro (or parsley)
- 1 lemon (cut into 6 wedges)

Delicious!! I will make this recipe again and again! Next time, I will add the lemon wedges and cilantro to change it up a bit.

Used this recipe a few times now and it is a head-turner. The majority of prep time is spent chopping the ingredients, other than that you are simply dumping everything into a pan. Little prep time, HUGE taste! By the way, you can take it up a notch by putting it over rice or pasta.

Very tasty the peppers and the tomatoes added great flavor will make this again
