- 4 boneless skinless chicken breasts (very large)
- 2 Tbsp. mayonnaise (regular or light mayo will work)
- 2 Tbsp. Dijon mustard (or use any mustard that appeals to you)
- 1 Tbsp. white balsamic vinegar (or use slightly less than 1 T white vinegar)
- 1 Tbsp. water
- 1/2 tsp. garlic powder
- 1/2 tsp. poultry seasoning
- 4 Tbsp. Parmesan cheese (freshly grated or coarsely grated, not the kind that comes in a can)
- 1 cup almond flour (or almond meal, You can also grind 3/4 cup almonds in the food processor, but it can be tricky to get it finely ground without turning it into almond butter!)
- 1/4 tsp. poultry seasoning
- salt
- ground black pepper
