- 3 oz. sliced pancetta (finely chopped, you can swap in Canadian Bacon if you can’t find pancetta)

Absolutely delicious.
Had to use all of my self control to not eat them all by myself before my friends arrived. Easy to make, although next time I will probably cook the pancetta ahead of time to make it easier to chop into small pieces. I also let the meatballs cook about 20-25 minutes instead of 15-20.

In the meatball mixture, I used 3/4 cup chopped raw spinach instead of parsley, also added salt and pepper, and a little more tomato paste.
For topping, I mixed the tomato paste with roasted garlic oil, about 1/4 t. dried basil, and a shake of granulated garlic.
It seems easier to form the meatballs and bake them on a foil lined sheet pan.
I used the food processor to make the bread pieces, place them in a 2 cup measure up to the 1 cup mark, pour in enough milk to saturate, but not to have to squeeze it back out.
Less steps to fool around with.
